Certified Angus Beef/Geographical Raw Material Sourcing
The
Certified Angus Beef® brand is beef so superior it has passed scrupulous evaluations for quality, and is regarded as the best beef available. Only 8% of beef meets the brand's high standards, as evaluated and certified by U.S. Department of Agriculture meat grades. Additionally all of our
Certified Angus Beef® raw materials are sourced from Midwestern grain fed beef.
Professionally Hand Cut Steaks
All Performance Food Group products are hand cut by certified Journeymen meat cutters. The certification process for these Journeymen entails a one and a half year program.
Each day our Journeymen cut steaks to order, ensuring the freshest cuts of meat.
The products are then visually inspected and vacuum sealed for quality assurance and product integrity.
Temperature Controlled Wet Aging Process
Our meat processing plant is regulated by the USDA with a full time, on premise USDA meat inspector.
All of our steaks are aged to a minimum of 21 days using a “wet aging process.”
The steaks are aged under refrigerated conditions throughout the wet aging process.
Wet aging yields a steak with optimal tenderness, juiciness, and overall flavor.
